Spinach and Orzo Soup
Recently, my mom was telling me about her Spinach and Orzo soup recipe. It is a simply Spinach and Orzo soup that is healthy, light and incredibly filling. This recipe takes five ingredients, involves very little prep time and takes about fifteen minutes from start to finish.
1 cup whole wheat orzo
4 cups water
Vegetable bouillon or 4 cups vegetable broth
2 cups spinach, washed
1/2 of a lemon, juiced
If you are using bouillon, follow that manufacturer’s directions to determine how much bouillon to add for 4 cups of water. I used Better than Bouillon Vegetable Base, which called for 4 teaspoons for 4 cups of water. If you are using vegetable broth, add it to the pan.
In a large saucepan bring your broth to a boil and add 1 cup of whole wheat orzo. Boil for eight minutes. Remove the orzo and broth from the heat, and add spinach and lemon juice. Allow to stand for five minutes before eating.
This is a great go-to soup when you want something light, healthy and filling. I am so grateful that my mom shared this one with me. And it is so versatile! This Spinach and Orzo soup has been added to my list of favorites. Next time, I think I will switch to low sodium vegetable broth, just to bring the sodium down.
